A Review Of Turkey Left Over Options
There are a ton of things that you can do with turkey for left overs.
I have had favourites and I know that you have favourites, and there are also things that I have never tried before that I probably should.
The first and most obvious choice is of course turkey sandwiches.
There are many variations and the left over turkey sandwich is very much a “to each his own” kind of situation. Some people like to have their potatoes and stuffing and cranberries and everything that was on their plate for dinner on their sandwich. I’m one of those guys. Ross Gellar from Friends was one of those guys and his love for that sandwich caused a break down.
Other people like just some turkey on bread with salt and pepper and maybe some mayo and cheese. I can’t blame those people at all. I just love turkey so every turkey sandwich is a good turkey sandwich.
The last favourite is always the hot turkey sandwich with gravy. It’s a little messy, and it’s a little more prep work when I make it the way that I like. But when you factor gravy into the situation there sometimes have to be exceptions made.
The next option, one of my favs as well, is left over turkey casserole.
I love a good casserole. With meat and potatoes and cheese and veggies. Mmm.
You can always go with pasta instead of potatoes. It’s a good substitute as far as starches go and it can be pretty filling to.
As far as veggies go I’m a big fan of corn. But you can do peas or carrots or mixed veggies or even cauliflower and broccoli. If you like cauliflower and broccoli I suppose.
Next we get to turkey soup.
The best way to make turkey soup is to use the turkey carcass. That’s the best way to make a quality broth. Then you add to veggies. I always choose onions, carrots and some pasta. I like soup and all, but I need more than just broth and some little bits of stuff to fill me up.
Lastly we get to the old stand by, the plate of turkey left overs.
It’s like getting a second chance to enjoy everything that you loved the first time you sat down to dinner. But without having to hang out with the family members that you might not have wanted to be with for the whole time.
The key is to get everything hot, try not to let things get soggy and use plenty of gravy. Good times.

Hawaiian Turkey Surprise – Dice one green, one red pepper and one medium red onion. Saute.
Add two cups of any leftover gravy and water or chicken /vegetable stock. To that add a generous helping of diced leftover turkey, and a can of crushed pineapple.
simmer 30 minutes, and thicken if needed. Spoon over a bed of rice
